1 packet of Vanilla Protein Pudding/Shake Mix

1 large egg

5-6 drops Better Life English Toffee Stevia

Dash of cinnamon (optional)

1-2 tsp. water


Preheat oven to 400 degrees. In a small bowl, combine protein powder, egg, stevia drops and mix well until batter forms.  Batter should be similar to the consistency of mashed potatoes and may need 1-2 tsp. of water. Line a small cookie sheet with parchment paper. Place batter in the middle of the cookie sheet, slightly spread batter to form a pancake. Sprinkle with cinnamon.  Bake in the oven for 6-7 minutes, until light golden brown.  It will puff up but will flatten when removed from the oven. Let sit for a minute and slice into quarters. Enjoy as a sweet treat or with breakfast. Enjoy!
