For the Turkey Gyros (20/30 Fast Track Day1-30 Approved):

1 lb. 98% Lean Ground Turkey

½ Small Onion, Finely Chopped

2 TB Flat Leaf Parsley, Chopped

2 Garlic Cloves, Pressed

½ tsp. Dried Thyme

½ tsp. Sea Salt

½ tsp. Black Pepper

Instructions:

Preheat the oven to 400 degrees. In a mixer, combine all ingredients and beat vigorously until combined for 1 minute. Separate the mixture into 4 even patties. Bake in the oven for 35 minutes. Take out the oven and let sit for 5 minutes. Patties are ready to be sliced into thin gyro slices.

For the Tzatziki Sauce (LTYB after Greek Yogurt Added):

1 5.3 oz Container of Plain Greek Yogurt

½ Cup English Cucumber (Finely Diced)

2 TB Flat Leaf Parsley, Chopped

2 Garlic Cloves, Pressed

Pinch of Sea Salt

Instructions:

In a smaller bowl, add yogurt and sprinkle with sea salt. Add pressed garlic and mix well. Add parsley and cucumbers and mix well. Let sit for 5 minutes.

Ready to serve! Gyros can be served warm or cool! Enjoy!
