-2 apples (no more than 12 ounces)

-1/4 cream soda Zevia

-juice of 1/2 lemon

-1 tsp cinnamon

-1/2 tsp allspice

-pinch nutmeg

-pinch clove

-3 room temperature egg whites

-3 Tbsp stevia


Peel and slice the apples. Combine apples with spices, lemon juice, and Zevia in a saucepan. Then bring the apples to boil and reduce to simmer until desired fineness. While the apples are cooking, place the egg whites in a mixer (can use a hand mixer) and beat the egg whites with wire whip until frothing. While still whipping, add stevia slowly to the mixer and continue beating until medium to stiff peaks are reached. Then add apples to a small baking pan and top apples with the meringue. Place the baking pan in 350 degrees Fahrenheit oven for 20-30 minutes, until meringue reaches 160 degrees Fahrenheit. Let rest at least 30 minutes.
